This a great salad accompaniment to almost anything. I use it a lot when entertaining as it's quick and easy to do. I make the dressing the day before so I only have to prepare the toms/courgettes and assemble. Do this 2-3 hours before required.
TOMATO & COURGETTE SALAD
with CHILLI DRESSING
1 Green Pepper
1 Fresh Green Chilli
3 Cloves of Garlic
¼ Tsp Cumin
1-2 Tbsp Wine Vinegar
4 Tbsp Olive Oil
Pinch of sugar
Salt & Pepper
2-3 Tbsp Fresh Coriander Leaves, chopped (Optional)
2 Beef Steak tomatoes – fully ripened
2 Courgettes
Roast the pepper and chilli until charred. Leave in a sealed polythene bag until cool – at least 30 mins
¼ inch slice the courgettes and steam for 5 minutes. Run under cold water to halt cooking and leave to drain.
Crush the garlic and add to oil, vinegar with cumin, sugar, salt & pepper. Remove the skin & seeds from the pepper and chilli, chop finely and add to the dressing. Mix well
Arrange slices of tomato and courgette in a dish and spoon over the dressing. Sprinkle with coriander leaves
